Meal Plan: October 23rd

This month has flown by! My radiator finally turned on this week and the leaves are really starting to change everywhere. I’ve gathered a new week of inspiration that I hope you will enjoy as well.

MONDAY: Harissa Chicken with Sweet Potatoes

> Another awesome looking recipe from Feasting At Home blog! Sheet pan dinners are the best!

TACO TUESDAY: Thai Shrimp Tacos

> These look so so good! If you want to keep it Paleo use cassava four tortillas or no tortilla and serve over slaw and swap out the peanut butter for almond or sun butter, and coconut Aminos for the soy sauce.

THURSDAY:Butternut Squash Noodles with Sausage and Kale

> This is such a good combo and I had a hard time finding the exact recipe but I’ll go off of this one and hopefully create my own soon.

FRIDAY: Cauliflower + Chickpea Golden Stew

Meal Plan: September 25th

It’s been so hot in Chicago that the thought of heating up my kitchen is the last thing I want to do! Thankfully it looks like we will be closer to seasonal temps this coming week which is great because I’m ready to be out of the 90°’s!

I’m going to include four to even five recipes for inspiration but only cook through three recipes per week. After using the meal plan the past five or six months I’m realizing that I need more time during the week to recipe test and so can only commit to three demos a week right now. I hope you guys understand and still find this helpful!

MONDAY: Ahi Tuna Salad

It’s still looks really warm Monday and I have a piece of Ahi tuna in my freezer so this is happening!

TACO TUESDAY: Roasted Cauliflower Chipotle Romesco Tacos

These sound so so good to me!

WEDNESDAY: Pressure Cooker Bolognese

I haven’t tried this recipe but it looks great and can be served with zoodles, sweet potato noodles or your favorite gluten free noodles.

FRIDAY: Pastelón (Plantain + Beef Lasagna!)

I’ve made a version of this dish before and it’s delicious so when I saw that Juli just posted a recipe I wanted to make it again.

Meal Plan: August 28th

Happy Sunday! My week ahead is looking a little busy so I may not have the time to demo all these recipes but I will try my best. I am also going to be including some more plant based recipes into my weekly plans. This week I’m excited to share this Black Bean Burger from one of my favs @pamelasalzman 💛

MONDAY: Black Bean Burgers with Roasted Pepper Sauce

I tested this recipe out last week and loved it! If you need to make them vegan you can sub a flax egg. I also didn’t have unroasted almond butter so I used tahini with about a teaspoon of red wine vinegar and the sauce was amazing! You’ll want to drizzle it on everything amazing.

Below is my recipe but I’ll be testing out one from the Tacolicous Cookbook!

WEDNESDAY: Salmon Quinoa Kale Salad

I’ve made this one before and just love it! It’s great to make extra and have on hand for a couple lunches too.

FRIDAY: Curtido + Steak

I received an early copy of Latin American Paleo Cooking from Amanda Torres of @thecuriouscoconut and it’s a really fabulous compilation of recipes from all over Latin America made Paleo compliant. Amanda has agreed to share her recipe for Curtido which hales from El Salvador and is a delicious no mayo slaw which is a great side dish to many things including steak, which is what I plan on cooking for Friday.

Serves 4-6

1 small head green cabbage, sliced very thinly or grated

4 carrots, grated

1 medium onion, thinly sliced and cut about 1″ long

2 jalapeños peppers, dived and seeded or 1-2 cloves of garlic minced

2 tsp Himalayan salt

2 tsp dried oregano

½ cup filtered water

½ cup apple cider vinegar

In a large nonreactive bowl, combine all the ingredients and stir well. Depending on how large your cabbage is , you may need to add a bit more vinegar and water. Place it in the fridge for 15 minutes before serving. The flavors will continue to develop as it sits. Store in an airtight container in the fridge for up to 3-4 days.

A little meatless Monday inspo that sounds super satisfying and delicious.

TACO TUESDAY: Steak Tacos with Pineapple

Need I say more?!

THURSDAY: Miso Glazed Cod with Cold Sesame Zucchini Noodles

This is a recipe I created a couple of years ago and it’s quick and perfect for summer. Simone’s zoodle recipe is also a favorite and they pair so well.

Serves 4

For the glaze

2T white or yellow organic miso

1.5T rice wine vinegar

1T water

1t lemon juice

2t coconut aminos or 1t gluten free tamari

1t grated ginger

1 clove garlic grated

1/4t cracked black pepper

4 cod fillets

Preheat oven to broil.

Whisk the glaze ingredients together and then top each of your fillets with the glaze. Place on a baking sheet and cook for 5-8 minutes depending on the thickness of the fish.

Cold Sesame Zucchini Noodles

FRIDAY: Asian Sweet Potato Noodles with Pork Ginger Meatballs

This recipe has all the flavors I love and adore so I can’t wait to make it! I have ground bees in my freezer so I may be making the swap for pork.

Happy Father’s Day! My dad and I have always shared a love for food, black coffee, good drinks and never ending baskets of tortilla chips! He was my first foodie friend besides being an all around great dad and I am so thankful for him.

I’m a day late getting this meal plan together after a busy couple of days! This week Pamela Salzman’s cookbook arrived in the mail: Kitchen Maters, so I’m dedicating this weeks meals to using her recipes both from her blog and the cookbook. Not only is this book beautiful to look at but the recipes are approachable and inspiring! Full of healthy cooking tips and meal planning tricks she has you covered from the meat eater to then plant based peeps.

MONDAY: Baked Asian Meatballs in Lettuce Cups

I love this recipe! Because I have ground beef in my freezer I’m going to use beef but the recipe is written using ground dark meat turkey, chicken would also work.

TACO TUESDAY: Chipotle Shrimp Tacos with Pineapple Slaw

This recipe is from her cookbook and she also made a version with cauliflower instead of shrimp found on The Local Rose blog.

WEDNESDAY: Quinoa Salad with Cherries, Almonds, Celery & Pecorino

This recipe sounds divine and perfect since cherries have been showing up at the farmers market. This one is from the cookbook but she has a couple of other quinoa salads on her blog. Here is a recipe for her Mediterranean Quinoa Salad and it’s delicious!
