Meal Plan February 12th

The snow is falling and I’m counting down the weeks we have left of winter. The good news is we’re almost half way through the month and this week we’re celebrating Valentine’s Day with our annual heart shaped cookie party with some of our closest mom friends and kiddos. I have fallen in love with the Gluten Free Sugar Cookies from Minimalist Baker and the Vegan Royal Icing from Heather Chritso. The icing is magic, it goes on smooth and hardens when it dries. It’s these simple traditions that help us give meaning to time and joy to being in the middle of winter. Plus, the kids have a total blast!

Meal Plan February 5th

February, the longest shortest month of the whole year if you live in Chicago or any other place where winter drags on for months. It’s also my birthday month and I must confess that I love getting older. I’ve always wanted to be 40 so I guess this year gets me that much closer to my idyllic number. 34, I’m ready for ya! In other news tacos are back!!!! I can’t tell you how much I missed tortillas while on Whole30 last month. I can forgo almost all the rest without a problem but when Tuesday rolls around I want my tacos on corn or cassava flour tortillas. Alright, Alright enough about me…

Meal Plan: December 18th

I can’t believe how close we are to Christmas! I am so behind this year and I leave on Thursday for a week in Kansas City spent with family. I came across all these recipes in the past two days and they all sounds amazing! The tacos are best marinaded at least an hour and up to a day before. If you’ve never had Korean Tacos you are in for a treat!

MONDAY: Cumin Lamb Meatballs

> These meatballs sound amazing! Check the recipe before to locate a couple of spices you might not have on hand.


> I love Korean bbq tacos and these look insane! I’ll be making gluten free swaps where needed.

WEDNESDAY: leftovers turned into a bowl

FRIDAY: Roast Chicken + Acorn Squash with Mint Almond Pesto

> This squash dish is right up my alley and it would be great with any meat or seafood.

Meal Plan: December 11th

It’s officially cold (30°) in Chicago and we woke up to a couple inches of snow this morning. We also had the best cookie decorating party yesterday and may have overdosed on a little sugar. Let’s just say I’m ready for some lighter comforting meals to carry me into next week.

Meal Plan: December 4th

December is officially here. Our tree is up and under constant rearrangement because little miss Nova cannot keep her hands off the ornaments! In food news I’ve got a good diverse meal plan for the week that I hope you’ll enjoy from a couple of my favorite bloggers.

MONDAY: Curried Beef + Apricots + Almonds

> I love recipes from Zenbelly and this is another great way to use ground beef outside of meatballs and burgers. You can serve this with rice or cauliflower rice.

TACO TUESDAY: Green Scallop Tacos

> Scallops are actually really quick and easy to make at home and totally delicious with this green avocado salsa. If scallops aren’t your thing this would also work with shrimp or cod.

THURSDAY: Skillet Roasted Moroccan Chicken & Olive Tagine

> This recipe is making me swoon. I can’t wait to make this one!

FRIDAY: Paleo Beef Brisket Pho

> I love following I Heart Umami and this Instant Pot pho recipe looks incredible and relatively quick!
