MEAL PLAN April 16th

If you’ve ever wanted to experience four seasons in one week you should visit Chicago in the Spring. We had snow on Monday, 70 degrees on Thursday and its about to rain today. We did our best to soak up as much sunshine as possible yesterday because I’m afraid the grey skies are here to stay for awhile longer. But enough about the weather, let’s talk food. In my constant search for new and inspiring recipes I’ve been drawn to cozy meals with lots of veggies. I’m also longing for some more seasonal variety and steering away from winter squashes and root vegetables because have I mentioned that it’s been a long winter? I hope that these meals offer some fresh new flavors and diversity to your dinner table too!

MONDAY: Sheet Pan Chicken with Za’atar, Potatoes & Greens

Za’atar! If you’ve never used this spice mix you’re in for a treat. This middle eastern blend of thyme, sesame seeds, sumac and salt is so good on just about anything. This whole sheet pan dinner craze is also a trend I can get behind.

TUESDAY: Spicy Lamb & Lentil Tacos

I came across this recipe last week and thought they would make great tacos! I’ll be using a goat milk yogurt but if you need to keep it dairy free just omit or use a plain dairy free yogurt.

THURSDAY: Bang Bang Shrimp Lettuce Wraps 

I can always count on a recipe from Alex to be freaking delicious so I’m extra excited to try these out!

FRIDAY: Spring Minestrone Soup

Another spring soup and again very adaptable. This version is vegetarian but could easily be made vegan or you could add chicken if you’d like.

MEAL PLAN April 9th

Happy Friday! Thanks everyone for the huge response to Nova’s takeover on Instagram yesterday. It was fun for us and I’m glad you all enjoyed it too! Check out the highlights on my profile if you missed it. It’s officially April but it still feels like winter in Chicago this past week. I’m ready for all things spring and summer and that includes spring veggies and lots of greens this time of year. This weeks menu reflects that and I’m most excited to introduce you to the quiche from Pamela Salzman. I made it for Easter breakfast and it was a huge hit!

Meal Plan March 19th

Hey! I normally get the meal plan up on Friday but this week got away from me and then I left for a weekend getaway to Camp Wandawega in Elkhorn, Wisconsin. It’s basically a magical place where you forget what time it is, enjoy the weak wifi and climb a tree house to read a book in the woods. It was a great time to get away from the noise of the city, see the stars and share some delicious meals around the bonfire with friends…already missing it! This week I’ll be cooking Tuesday through Thursday but I’ll include a recipe for Monday if you need some more ideas for this week or next.

Meal Plan March 12th

I can’t believe another week has flown by and it’s Friday already! Daylight savings starts on Sunday and I couldn’t be happier. I am so ready for Spring flowers, the start of longer days and a little warmer temps. Nova has been asking when we can go to the beach which isn’t helping when I know we are months away from beach weather and my response to everything is “waiting is hard”. But while we wait I’ve come up with some good recipes to get us through the next week.

Meal Plan February 26th

We are two weeks away from Spring Forward and I am soooooo ready for the extra light! To cope with the next few weeks of Winter I’ve put together a hearty meal plan full of tasty recipes. (I mean does it get anymore tasty than pork tacos???) For those of you who are checking out my website for the first time you should know that I cook these recipes daily and post the demo to my Instagram Stories.
