It’s the fist week of March and the weather in Chicago has been unseasonably warm and sunny! It’s amazing what a little sunshine can do for your spirits in the middle of winter. This week I took a look through my freezer and pantry to see what’s been lying around and needs to be used which inspired this weeks meal plan. I don’t overstock my pantry because I just don’t have the space, but every once in a while I like to challenge myself to look at what I have and use it up. A few things I always have on hand are lentils and quinoa. Even though they aren’t considered “Paleo” I find that my body digests them fine and I really enjoy them in soups and salads. I also like switching up my protein sources and enjoying a plant-based day each week because we can all benefit from eating more plants.

We are two weeks away from Spring Forward and I am soooooo ready for the extra light! To cope with the next few weeks of Winter I’ve put together a hearty meal plan full of tasty recipes. (I mean does it get anymore tasty than pork tacos???) For those of you who are checking out my website for the first time you should know that I cook these recipes daily and post the demo to my Instagram Stories. The snow is falling and I’m counting down the weeks we have left of winter. The good news is we’re almost half way through the month and this week we’re celebrating Valentine’s Day with our annual heart shaped cookie party with some of our closest mom friends and kiddos. I have fallen in love with the Gluten Free Sugar Cookies from Minimalist Baker and the Vegan Royal Icing from Heather Chritso. The icing is magic, it goes on smooth and hardens when it dries. It’s these simple traditions that help us give meaning to time and joy to being in the middle of winter. Plus, the kids have a total blast!

Oh my goodness what a weekend! Nova turns three on Monday but we celebrated on Saturday with a minion themed party. It was so much fun but I’m still recovering 😂. If you are looking for full proof Paleo cake recipes Danielle Walker of @againstallgrain is my go to! Her yellow cake and buttercream recipe from Celebrations Cookbook turned out perfect.
September is all about apples for me! We went apple picking on Wednesday and I still have 10 pounds of honey crisp on my counter! I’m thinking of making instant Pot apple sauce and maybe some gluten free hand pies to keep in my fridge.
Happy last week of summer before it’s officially fall!

This recipe is from @nomnompaleo newest cookbook Ready Or Not and I found it on the blog. I have been dying to try it and with the apples I have I thought it would be perfect.

Wow, what a weekend! To say I overindulged would be an understatement but it was my best friend’s first time in Chicago and so there was just a lot of eating that needed to happen. On Friday night we also attended the Nom Nom Paleo book signing event for Ready Or Not! It was super awesome to finally meet Michelle and the whole family in real life after so many years of following her work and loving her recipes. In honor of the books release I’m going to cook from the book this week and if you don’t already have the book I hope this inspires you to pick it up.
MONDAY: Cold Ramen Salad
I’m going to make this one vegetarian with just the eggs and not include the pork but you could use any left over protein you like. This also includes the All Purpose Stir Fry Sauce!
TACO TUESDAY: Cracklin Chicken Tacos
How have I never thought about this combo I’m not sure! This chicken is crazy good and will make a great taco. I may add a slaw and some fresh salsa.
WEDNESDAY: Chicken + Shrimp Larb
I love the Vietnamese dish called Larb and I’ve made a lot of variations over the years. This one includes chicken and shrimp and is from the new book and was shared over on Skinny Taste.
FRIDAY: Asparagus Beef with Cauli Rice
This recipe hasn’t been shared by Michelle yet outside of the book but you can watch how to use the All Purpose Stir Fry Sauce from Monday night again.
