MEAL PLAN: April 15th

Well, we had two gorgeous days last week and then we were swiftly reminded that it’s still Spring and we aren’t out of the woods yet. With that said I wanted to add some more cozy soups to the menu this week. I’m also trying to add one recipe a week that has a few more steps or takes a little more time to make as a challenge to myself to keep growing and exploring. And while I love a good 30 minute one sheet pan dinner I also love the whole cooking process and some recipes require a little more love and time to put together. I will typically make a meal like this on Friday night if we are staying in or leave it for the weekend when time permits. Here’s to a new week ahead!

MONDAY: Tikka Masala Soup

I love this recipe from The Modern Proper ladies, Natalie and Holly. It’s also Whole30 compliant.

TUESDAY: Smoky Mushroom Tacos

I’m having a couple of girls over for book club and mushroom tacos are some of my favorite to make. Portobello’s are meaty and with a little heat, creamy guacamole and tangy pickled onions they are sure to please.

THURSDAY: Peruvian Seafood Stew with Cilantro Broth

This sounds like heaven to me! If you aren’t into seafood you could also use shredded chicken or chickpeas.

FRIDAY: Meatball and mushroom tray bake with celery salsa

I just can’t get enough of Ottolenghi recipes! The combination of flavors has me drooling. This one does take about an hour to make but I’m sure the results will be worth it. Since this recipe come from a British publication the ratio’s are listed in grams so I’ll make the conversions and share them with you.

MEAL PLAN January 7th

Happy 2019! If you’ve been following along on Instagram you know that I started Whole30 this past week. This is my fourth year of doing a Whole30 in January and I really think it’s a fantastic way to start the year. There is something about slowing down, eating with more intention and focusing on simple whole fruits, vegetables, nuts, seeds, healthy fats and healthy animal protein that lays a foundation for the days, weeks and months ahead. If this is your first Whole30 or you are interested in trying it I would highly recommend reading Melissa Hartwig’s book It Starts With Food. This will give you the tools, science and personal stories of why and how this approach can promote optimal health body, mind and spirit.


MONDAY: Sesame Meatball & Cauliflower Rice Bowl 

These meatballs looks so delicious! I am going to swap out the Worcestershire sauce for Fish Sauce in this recipe to keep it compliant. You could use chicken, pork, turkey or beef for these. This recipe could easily be doubled as well.

TUESDAY: Chipotle Fish Taco Bowls

This is a favorite recipe of mine to make and if you are not following Alex @thedefineddish change that stat! These can be made with your favorite fish or even shrimp.

THURSDAY: Thai Yellow Curry with Prawns

I love a good shrimp curry and Danielle’s recipe is delicious and packed with lots of veggies.

FRIDAY: Butternut Squash Noodles with Sausage & Peppers 

I love this dish so much! You can use whatever sausage you enjoy.

MEAL PLAN May 21st

I can’t tell you how much I have been enjoying the spring blooms and sunshine this week! It’s amazing what a difference it makes in all of our moods. Summer can’t come quick enough for me! When I was going through recipes and thinking about flavors for this week I was really drawn to middle eastern dishes. If you’ve only ever made red shashuka then the Israeli green version will be a welcome change especially with all the greens available in the markets right now. It’s perfect for breakfast, brunch or dinner and it’s all served in one pan. I also am going to try a gluten free pita recipe that I will include to soak up the green egg goodness.

Meal Plan March 19th

Hey! I normally get the meal plan up on Friday but this week got away from me and then I left for a weekend getaway to Camp Wandawega in Elkhorn, Wisconsin. It’s basically a magical place where you forget what time it is, enjoy the weak wifi and climb a tree house to read a book in the woods. It was a great time to get away from the noise of the city, see the stars and share some delicious meals around the bonfire with friends…already missing it! This week I’ll be cooking Tuesday through Thursday but I’ll include a recipe for Monday if you need some more ideas for this week or next.

Meal Plan January 29th

It’s the final days of Whole30! I hope you are feeling awesome, inspired, energized and ready to make some more long term changes to your health. This is my fourth round and in a lot of ways I eat this way majority of the time as you know by now. What I love about the program is it empowers you to find out how your individual body responds to different food. Over the years I found that I can handle small amounts of dairy and very little gluten. I can also eat corn in some forms i.e. tortillas but fresh corn really bothers me. These little changes have made a big difference in how I feel overall and I’m thankful for programs like the Whole30 for getting me more in tune with my body. With that said I will be going back to corn and cassava tortillas after this week and a glass or two of wine which are really the things I miss the most but I know in moderation I can handle well.
