Another week of winter down and how many more to go? It’s that time of year when spring fashions are popping up everywhere while the current midwest temps are producing inches of snow fall…it’s really such a tease.  Well, if we must be stuck inside we might as well be eating some beautiful colorful food while we dream of spring!

Meal Plan: January 8th

New Year, new name, new website! You guys this has taken me forever to accomplish and it’s still a work in progress but after a couple weeks off from posting meal plans I’m back! As you know by now I’m doing my annual January Whole30 so all the recipes will reflect that. I’ll be posting two new recipes from me this week as well as adding two from other sources. I hope you all enjoy the new format and find it easier to access recipes when planning your meals. Here’s to the new year! May it be filled with lots of delicious dishes!

> Breakfast for dinner or meal prep for breakfast you decide. Its another new one and I’m loving it.

Friday: One Skillet Crispy Chicken Thighs with Harissa

> I love one skillet dishes and combined with the fact that I just found some really awesome Whole30 compliant harissa sauce from a brand called Mina it was a no brainer.

Meal Plan: December 18th

I can’t believe how close we are to Christmas! I am so behind this year and I leave on Thursday for a week in Kansas City spent with family. I came across all these recipes in the past two days and they all sounds amazing! The tacos are best marinaded at least an hour and up to a day before. If you’ve never had Korean Tacos you are in for a treat!

MONDAY: Cumin Lamb Meatballs

> These meatballs sound amazing! Check the recipe before to locate a couple of spices you might not have on hand.

TACO TUESDAY: Korean BBQ Tacos

> I love Korean bbq tacos and these look insane! I’ll be making gluten free swaps where needed.

WEDNESDAY: leftovers turned into a bowl

FRIDAY: Roast Chicken + Acorn Squash with Mint Almond Pesto

> This squash dish is right up my alley and it would be great with any meat or seafood.
