Meal Plan: October 30th

Ask and you shall receive! The meal plan will now be available on Friday since majority rules and polls don’t lie 😜 Because Halloween lands on Tuesday and we have plans to collect sugar and see friends, tacos are not on the menu this week…gasp! But if you make enough ropa vieja Monday night leftover tacos would rock on Tuesday!

MONDAY: Pressure Cooker Ropa Vieja

> I’ve had this recipe saved for some time now and it looks awesome! Serve with plantains, rice or caulirice and optional guacamole for Cuban comfort food heaven.

WEDNESDAY: Vegan Mac+ Cheese

> I’ve tried a couple vegan mac and cheese recipes with good results and this one doesn’t require any fake butter which I’m happy about. I’ll be using gluten free pasta and hoping Nova will be fooled by this one!

THURSDAY: Chicken + Avocado Soup

> This recipe is super simple and satisfying! If you are able to use homemade chicken stock it will be that much better.

FRIDAY: Bam Bam Shrimp

> I haven’t made this one in forever and it’s so good! I’ll make some caulirice to go with it too.

Meal Plan: October 9th

I hope you guys are having a great weekend! We’ve already accomplished pumpkin spiced waffles, a pumpkin patch and a pony ride so I’d say we’re off to a good start. The weather has been unseasonably warm with a little rain but this next week looks a tad cooler which I’m ready for. Sweater weather really is the best! I’m also really excited about this weeks menu with some new recipes and one repeat. Hope to see you all in the kitchen!

MONDAY: Saffron Chicken + Plums

This dish sounds so dreamy and one sheet pan required! If you have time make the spice rub and marinate the night before for best flavor!

TACO TUESDAY: Pressure Cooker Barbacoa

I love this recipe! It’s a total winner and I have some random cuts of beef (ranch steak + flat iron) in my freezer that will work with this recipe.

THURSDAY: Coconut Lamb Curry

I love lamb and curry and this dish would be great served over rice or cauliflower rice.

FRIDAY: Cod + Cauliflower Chowder

This recipe is in the newest Bon Appetit issue and sounds delicious, cauliflower, tomatoes herbs and mild white fish! It calls for monkfish or cod which I have in my freezer.

Meal Plan: September 25th

It’s been so hot in Chicago that the thought of heating up my kitchen is the last thing I want to do! Thankfully it looks like we will be closer to seasonal temps this coming week which is great because I’m ready to be out of the 90°’s!

I’m going to include four to even five recipes for inspiration but only cook through three recipes per week. After using the meal plan the past five or six months I’m realizing that I need more time during the week to recipe test and so can only commit to three demos a week right now. I hope you guys understand and still find this helpful!

MONDAY: Ahi Tuna Salad

It’s still looks really warm Monday and I have a piece of Ahi tuna in my freezer so this is happening!

TACO TUESDAY: Roasted Cauliflower Chipotle Romesco Tacos

These sound so so good to me!

WEDNESDAY: Pressure Cooker Bolognese

I haven’t tried this recipe but it looks great and can be served with zoodles, sweet potato noodles or your favorite gluten free noodles.

FRIDAY: Pastelón (Plantain + Beef Lasagna!)

I’ve made a version of this dish before and it’s delicious so when I saw that Juli just posted a recipe I wanted to make it again.

Meal Plan: July 17th

Hey guys! Hope you are having a great weekend! Here is this weeks lineup. I know a number of you took advantage of the Instant Pot Prime Deal last week and now you are staring at this large machine wondering where to start. I was intimidated at first too! My number one advice is to seek out recipes using the Instant Pot and follow the recipe until you get more comfortable with using it. I’ve added one of my favs from Nom Nom Paleo on the menu this week!

MONDAY: Grilled Peruvian Chicken or Portobellos with Green Sauce + Avocado Cucumber Salad

I love that this recipe can be made with meat or mushrooms, I might do both because I love portobellos!

TACO TUESDAY: Vietnamese Fish Tacos

So, I know I just made the banh mi bowls last with steak but then I stumbled upon this recipe and I have some leftover pickled vegetables to add on top!

WEDNESDAY: Instant Pot Chicken Pho

This recipe is a go to for me! The broth alone makes it totally worth it. This recipe uses zucchini noodles but if you would rather use rice noodles go for it!

FRIDAY: Southwestern Style Taco Wedge Salad

If it has the word taco in it I’m probably on board! This recipe sounds like a quick fresh take on a taco salad.
