MEAL PLAN: May 6th

Hey friends, this last week I was really only able to make two meals from the plan because life and then we are leaving for the weekend to visit family and I hate wasting food almost more than anything. I’m also very excited for Monday night because Chicago hosts the James Beard Awards which is basically the culinary world’s Oscar night and this year Nathan and I get to attend the show! With that said, I won’t be home to cook on Monday but I’ll still include a Monday recipe that I’ve made and loved. Cheers to a new week ahead!

MONDAY: Baked Falafel

Other then remembering to soak the chickpeas over night this recipe is super simple and super delicious!

TUESDAY: Blackened Mushroom Tacos with Collard Green Slaw

I have a thing for mushroom tacos! They are really so good and meaty and this collard slaw sounded like a great idea.

THURSDAY: Bam Bam Shrimp

This recipe is a huge favorite of my husbands and it’s the perfect quick takeout fakeout weeknight meal. Serve with cauliflower rice

FRIDAY: Chicken & Onion Tagine

This recipe looks so good! There is some marinade time so plan ahead the night before or the morning of for best results.

MEAL PLAN: APRIL 22

You guys, I still haven’t planned my Easter menu and it’s Friday night! It’s been a full week around here but two things are certain, there will be lamb and there will be carrot cake. These are my two must haves and everything else is up for grabs. Off the top of my head I’m thinking deviled eggs to start, a, herb crusted rack of lamb, side salad with spring veggies like carrots, peas and radishes with a ton of fresh herbs, something with asparagus and lastly my absolute favorite gluten free carrot cake recipe from Danielle Walker’s Celebrations Cookbook. I make mine with a maple sweetened whipped goat cheese frosting that I could eat all on it’s own. I hope you have a wonderful Easter weekend with your friends or family!

MONDAY: Kimchi Braised Chicken Thighs

I love Kimchi and Chicken so this was a no brainer! Serve with cauliflower rice, braised greens or rice.

TUESDAY:  Citrusy Grilled Fish Tacos with Citrus Slaw and Orange Cashew Sauce

I’m all about a fish taco but the orange cashew sauce is what drew me in!

WEDNESDAY: Peruvian Inspired Whole Roasted Chicken with Tangy Green Sauce

FRIDAY: Instant Pot Arroz Con Pollo

This recipe looks fantastic!

MEAL PLAN: March 4th

I’m feeling a little ahead of the curve this week since I’m releasing this meal plan while on a weekend getaway with my honey. It’s been my personal tradition that every February I must leave winter in Chicago and go find some warmth and sunshine in California. I’m hoping for sun but even if it’s raining it’ll still be a lot warmer than 28! I’ll be letting loose some this weekend so I’m planning ahead for some light and fresh meals for next week. Here’s to a new month which puts us closer to summer!

MONDAY: Paleo Breakfast Burrito Bowl

I’m a total breakfast for dinner girl and this bowl looks amazing to make any time of day! This would also be a great meal prep meal.

TUESDAY: Smokey Paprika Fish Tacos with Apple Slaw

I love fish tacos and these look simple and delicious plus i love the addition to apple in the slaw. This is also easy to make as a bowl if you aren’t eating tortillas.

WEDNESDAY: Thai Curry Noodle Soup (Whole30)

I saw Carmen post this when she took over the whole30recipes page and t looked delish!

FRIDAY: Garlicky Chicken Thighs with Scallion & Lime

I’m a sucker for braised chicken thighs and a whole head of garlic! Serve with rice or cauliflower rice and a side salad.

MEAL PLAN July 9th

Hey guys! It’s been a couple of weeks since I’ve posted a meal plan and I’m ready to get back in the swing of things. Between, wedding planning and summer travel I’ve been a little distracted. I also plan on starting a Whole30 because I’m getting married in 36 days and I want to feel my best going into August. I typically do one Whole30 a year and in January but after coming back from vacation I am ready for a reset. Everyone has different experiences and reasons for doing a Whole30 and mine are increased energy, mental clarity, great sleep and I notice better digestion overall. I tend to loose maybe five pounds so this isn’t about weight loss for myself but truly taking more time to be aware of what and how food and beverages effect my whole being. I’m also excited to focus on all the beautiful produce that is available this time of year vs the winter season and get grilling! This whole week is brought to you by the June/July Grilling Bon Appetit magazine because there are tons of compliant tasty looking recipes to choose from!

See you in the kitchen!

Meal Plan March 26th

Hey! Is it really the last week of March already!? This month has flown by and this next week is leading up to Easter Sunday. I’ll be in Kansas City to celebrate with my family this year and plan on using some recipes from Danielle Walkers Celebrations Cookbook. She has an entire Easter menu and it looks fantastic! This week I’m working as a food stylist on set which is super fun, but it also means I most likely won’t be cooking with you guys. I still wanted to make a meal plan to give you some more inspiration and if time allows I’ll try and make an appearance.

See you in the kitchen!
