MEAL PLAN April 2nd

He is Risen! Happy Easter Weekend! I’m in Kansas City visiting family and planning out the feast for Sunday with my mom. My Easter lunch menu is all about smoked salon and dill deviled eggs, rack of lamb, spring veggies like asparagus and spring greens and lastly the most delicious grain free carrot cake cupcakes with a honey goat cheese frosting. Trader Joe’s sells a honey goat cheese that I soften and whip up and its a great cream cheese frosting alternative. I’m also excited to get back in my kitchen with you guys next week after a super busy week away. Most of these recipes are plant forward and easily adaptable to your families preferences. Read my notes below for easy swaps.  Here’s to a new month and a beautiful holiday weekend!

Meal Plan: December 11th

It’s officially cold (30°) in Chicago and we woke up to a couple inches of snow this morning. We also had the best cookie decorating party yesterday and may have overdosed on a little sugar. Let’s just say I’m ready for some lighter comforting meals to carry me into next week.

MONDAY: Thai Peanut Pomegranate Chicken

THURSDAY: Indian Spices Cauliflower Soup

> All these flavors have got me very excited!

FRIDAY: Fish En Papillote

> This is such a delicious and simple recipe that is great for entertaining but simple enough for a weeknight meal.

This month has flown by! My radiator finally turned on this week and the leaves are really starting to change everywhere. I’ve gathered a new week of inspiration that I hope you will enjoy as well.

MONDAY: Harissa Chicken with Sweet Potatoes

TACO TUESDAY: Thai Shrimp Tacos

> These look so so good! If you want to keep it Paleo use cassava four tortillas or no tortilla and serve over slaw and swap out the peanut butter for almond or sun butter, and coconut Aminos for the soy sauce.

THURSDAY:Butternut Squash Noodles with Sausage and Kale

> This is such a good combo and I had a hard time finding the exact recipe but I’ll go off of this one and hopefully create my own soon.

FRIDAY: Cauliflower + Chickpea Golden Stew
