MEAL PLAN: April 15th

Well, we had two gorgeous days last week and then we were swiftly reminded that it’s still Spring and we aren’t out of the woods yet. With that said I wanted to add some more cozy soups to the menu this week. I’m also trying to add one recipe a week that has a few more steps or takes a little more time to make as a challenge to myself to keep growing and exploring. And while I love a good 30 minute one sheet pan dinner I also love the whole cooking process and some recipes require a little more love and time to put together. I will typically make a meal like this on Friday night if we are staying in or leave it for the weekend when time permits. Here’s to a new week ahead!

MONDAY: Tikka Masala Soup

I love this recipe from The Modern Proper ladies, Natalie and Holly. It’s also Whole30 compliant.

TUESDAY: Smoky Mushroom Tacos

I’m having a couple of girls over for book club and mushroom tacos are some of my favorite to make. Portobello’s are meaty and with a little heat, creamy guacamole and tangy pickled onions they are sure to please.

THURSDAY: Peruvian Seafood Stew with Cilantro Broth

This sounds like heaven to me! If you aren’t into seafood you could also use shredded chicken or chickpeas.

FRIDAY: Meatball and mushroom tray bake with celery salsa

I just can’t get enough of Ottolenghi recipes! The combination of flavors has me drooling. This one does take about an hour to make but I’m sure the results will be worth it. Since this recipe come from a British publication the ratio’s are listed in grams so I’ll make the conversions and share them with you.

MEAL PLAN: April 8th

Happy Friday friends! I’ve put together a new week of meals that I hope sparks some joy in the kitchen this week. A couple of these recipes I had bookmarked and can’t wait to eat: pozole verde & roasted salmon with salsa verde! It’s spring and verde or greens are popping up everywhere. From peas to asparagus, tender leafy green, fennel, and artichokes it’s time to indulge and enjoy what this season is all about.

MONDAY: Spicy Beef with Coconut Rice

I love a good Larb or aka the Thai meat salad. This one from Gabby looks so delicious. To make gluten free use Tamari or swap the sugar and soy for coconut aminos. You can also serve this with coconut cauliflower rice. When cooking the cauliflower rice use coconut oil and a couple tablespoons of coconut milk.

TUESDAY: Pozole Verde

I know, I know, this is not a taco but I’ve been wanting to make it ever since Alex posted it!

WEDNESDAY: Grilled Chicken Souvlaki Greek Salad

Grilled Chicken and Salad I’m all over this one. Also featuring asparagus now that spring is here.

THURSDAY: Roasted Salmon with Citrus Salsa Verde

Saw this recipe pop up last week and it was a no brainer. Serve with a roasted veggie and or side salad.

 

 

MEAL PLAN: April 1st

Happy April! I asked you guys what you wanted to see in the meal plan and I got so many great responses to add to the next couple of weeks. I got everything from salads, plant based, meatballs, chicken, spring veggies to Persian. It was fun to find recipes around these topics and I was able to mesh a couple of them together for this coming week. I’m really looking forward to some new veggies and spring recipes ahead. The newest issue of Bon Appetit has a lot of great recipes and I’m using two of them to kick off April.

MONDAY: Dinner Salad with Radicchio and Roasted Sweet Potatoes

I love bitter greens mixed with sweet and savory. Jammy eggs and a cashew dressing sound absolutely amazing! If you wanted to add chicken on salmon to this you can.

TUESDAY: Roasted Cauliflower Tacos with Chipotle Romesco

This recipe is a major favorite of mine and it just happens to be plant based. The romesco will make more than you need but it’s a sauce you can use with other roasted things all week.

THURSDAY: Roast Chicken Thighs with Peas and Mint

Peas and mint just scream spring and a good skin on roasted chicken thigh is my jam.

FRIDAY: Beef Kofte and Shirazi Salad

This Persian meatball or kofte combined two requests into one! And the side salad looks super refreshing.

Mexico City, Mexico

This is part two of our ten days in Mexico. After five days in the jungle we were ready for some city adventures. It’s a two and a half hour flight from Tulum to Mexico City, and I’m so glad we went. After two days we were already talking about who we wanted to come back with because it’s just that great. Also referred to as CDMX this city is vast and colorful and you will be hard pressed not to be lured by the scent of Tacos Al Pastor on every corner! From the stunning historical architecture to the neon painted houses to the scores of cultural sites and museums second only to Paris and the sheer number of restaurants and food stalls this city is teeming with life! If there is one thing you will take away is just how much Mexicans love to eat. The quality of the food from the street to fine dining is some of the best in the world. And lastly the people are some of the most gracious, hospitable, humble, hard working, and warm people you will meet. We got by great with a little help from google translate and our feeble attempts to speak Spanish and we were always met with graciousness and a smile.  This is by no means an exhaustive hit list but these are the places we stayed, ate, drank, shopped etc.

Quick Tips

  • Uber is a fantastic way to get around the city and it’s still super affordable
  • Even with being a large city cash is still preferred
  • Street food is practically on every corner! Look for stalls with a line of people they are usually the best.
  • Neighborhoods we enjoyed: La Condesa, Roma, Polanco, Historic Center, Juárez, Coyoacán

If you are looking for a good cup of locally sourced Mexican coffee visit one of their two locations and bring a bag of beans home.

El Moro  @churreriaelmoro

If there was one spot I was dying to try it was El Moro. This place has been making churro’s since 1935 and they are simply the best! They have five locations (we loved The one in Roma) with the original spot open 24/7. Make sure to try one of the 8 hot chocolates.

Rosetta Bakery  @panaderiarosetta

We didn’t make it here but it comes highly recommended for beautiful pastries, breakfast and sandwiches. There are three locations.

Contramar  @contramarmx

Make a reservation for lunch because they don’t do dinner service. The tuna tostadas are legendary along with the Pescado a la talla whole grilled fish with Contramar green and red sauce. Best Paloma on the trip this spot is not to be missed!

Cicatriz Cafe  @cicatrizcafe

If you are looking for small bites and natural wines this place is the cutest and not to be missed. Get a seat at the bar with a glass of local rose and order the meatballs.

No sign, no website, just a line of people on the corner of Merida/Colima in Roma. Famous for her blue corn quesadillas, sopes, gorditas and pamabazos. With many locations across the city the Punto Historio location in the Downtown Mexico Hotel had the best scallop tostada of the trip.

Azul Historico  @azulrestaurants

Located in the lobby of Downtown Mexico Hotel this open air courtyard serves traditional Mexican dishes and if you are feeling adventurous they will top your guacamole with crickets!

We were in the mood for sushi and this intimate spot did not disappoint. Get the Omakase menu with fresh fish from Japan and Mexico flown in daily.

La Clandestina

This is my kind of bar, cozy, dark with a friendly staff serving mezcal flights and delicious mezcal cocktails.

MARKETS 

Mercado de Coyoacán

There are many markets across the city selling food and souvenirs but this was by far our favorite. Located in the Coyoacán neighborhood and within walking distance from The Frida Kahlo House & Museum. Come ready to eat because this spot is filled with delicious food throughout. Make sure and eat at Tostadas Coyoacán! From kitchen wares, incense, to handmade leather shoes you’ll find all kinds of things to bring home.

A cute plant and gift shop next door to Cicatriz Restaurant

Casa Bosques  @casabosques

Small locally owned bookstores are all over the city. Casa Bosques is a beautifully curated shop for indie mags, journals and books.

Onora  @onoracasa

This is such a wonderful shop filled with locally handcrafted modern textiles, pottery, jewelry and housewares. A must stop!

Utilitario Mexicano  @utilitariomexicano

Like an old school general store UM carries simple, beautiful housewares sourced from all around Mexico at great prices.

SITES & MUSEUMS

Museum of Chocolate 

We stumbled upon this by accident. We didn’t take the tour but we did snag a bunch of locally made chocolate bars and hot chocolate to bring home.

Xochimilco 

This boat ride down the canals comes highly recommended as a way to spend a couple of hours to half a day.

Museum of Modern Art & Park

This museum is in the middle of beautiful Chapultepec park and worth the trip for both.

The Palace of Fine Art (Bellas Artes)  @mbellasartes

This stunning museum is located in the Historic Federal District

Don’t forget to reserve tickets well in advance or you won’t get in like us!

Teotihuacan Pyramids 

This was totally worth the trip. You can take a bus or we chose to take an Uber about a 45 minute drive from Mexico City and cost us less then $20 US.

Located a short walk from the pyramids La Gruta is set in a cave serving delicious traditional Mexican cuisine. If visiting on the weekend make sure to make reservation. Order the tortilla soup.

 

MEAL PLAN: March 25th

Happy Spring! I know I keep saying it but I’m so ready for this new season. I love the longer days, more sunshine and warming temps mixed with some rain. This past week I wasn’t able to do as many demo’s with having family in town but I’m back this week with some new recipes (hello Moo Shu Pork!) and a shrimp stir fry that I love but haven’t made in some time. All of these recipes are either Whole30 friendly or easily adaptable.

MONDAY: Moo Shu Pork 

Moo Shu Pork i.e. the Chinese Taco! Growing up this was one of my favorite things to order when we went out for Chinese. Michelle from @nomnompaleo has made this a paleo friendly recipe that sounds awesome.

TUESDAY: Ground Goat Tacos with Blackened Tomatoes

Teri from @nocrumbsleft gave me some ground goat to use and of corse I thought tacos! If you can’t find goat you can sub lamb or ground beef. Serve over tortillas, cauliflower rice or lettuce cups.

THURSDAY: Pad Priew Wan Goong: Thai Sweet and Sour Stir-Fry with Shrimp

I love this recipe! It’s super simple to make and has tons of flavor. It’s also Whole30 compliant. Serve alone with rice or cauliflower rice.

FRIDAY: Roast chicken with dates, olives and capers

Another recipe from one of my favorites! Ottolenghi never fails me and this chicken recipe looks fantastic. Plan ahead and marinade the chicken a day or two before for optimal flavor. If you can’t find date syrup I have found pomegranate molasses easier to find and would work great. If you want to keep it alcohol free use chicken stock instead. Serve with rice, cauliflower rice and a salad.
