MEAL PLAN June 4th

Happy June! Summer is finally here and I’m so excited! Summer is my favorite season and we’ve had the longest winter this year so I’m ready for the heat. I’m also ready to start grilling all the things. Nathan and I just received a Traeger Grill and we couldn’t be more giddy or excited because now we can smoke and grill with the best wood fired grill in all the land. With that said I’ll be adding more grilling recipes to the meal plan this summer because I haven’t had a proper grill in over two years and this girl loves to grill everything from veggies to seafood and meats. Here’s to grilling season!

MONDAY: Coconut Quinoa Coleslaw with Grilled Chicken or Rotisserie Chicken

This recipe looks super delicious and I love having fun salads to have for weekday meals or weekend backyard bbq’s.

TUESDAY: Lebanese Harissa Steak Tacos

Heather Cristo has the best flavor combinations and this recipe is no exception. This could also be served as a bowl.

THURSDAY: Banh Mi Burger Stack 

Yesterday I had a traditional Banh Mi Sandwich and I just love the flavors so much and this recipe from Alex is so spot on!

FRIDAY: Grilled Salmon Skewers

This looks so delish and the it’s worth it just for the Basil dipping sauce. Serve with a salad and or cauliflower rice.
