MEAL PLAN May 28th

I can’t believe that we are headed into the final week of May and Memorial Weekend! We went from straight up sweater weather on Tuesday to 85 and blue skies on Wednesday and let’s just say I’m ready for it to stay this way. Grilling season is finally here and I’m including one of my favorite grilled recipes for Monday. I traditionally get together with my very good friend Shea and her fam and make all the things! This year will be no different and these Sambal Chicken Skewers will be made again. I hope you all have a wonderful holiday weekend with family and friends and hopefully take a moment to remember those who have given their all for our freedom.

MONDAY: Grilled Sambal Chicken Skewers 

These are seriously the best! You can also swap the brown sugar for coconut sugar if you want to. Serve with rice, grilled cauliflower and a cucumber salad.

TUESDAY: Instant Pot Carnitas 

I’ve made this recipe many times and I have some friends coming over so I it’s happening again because it’s a major crowd pleaser. I also add two cinnamon sticks to mine!

THURSDAY: Coconut Rice Salmon Bowls 

Yum! I love coconut rice, mango, avo and salmon so yes I’m pumped about this recipe!

FRIDAY: Jalapeno Shrimp & Veggie Egg Bake 

Another awesome fritatta that could be made for breakfast, lunch or dinner. Feel free to skip the shrimp if you want to keep it vegetarian.
