Hey! Happy Friday and finally I think it’s safe to say Happy Spring from Chicago! After more snow this week it looks hopeful that its about to warm up to seasonal weather this coming week. I love being outside and Nova does too so we are really looking forward to the change of season and more time spent in parks than our apartment. I don’t know about you but breakfast and Mexican food are my two favorite things. I could eat Mexican food everyday but I don’t want to loose those of you who don’t agree so I have included just two Mexican inspired dishes this week and a breakfast that I love making for dinner as well. Here’s to a new week!

MONDAY: Sweet Potato Waffles & Eggs
I’ve made a couple different versions of these and I love them. They also freeze and reheat up well in my experience.
TUESDAY: Taco Pizza
Yep that’s right folks I’m breaking out to combine two of the best things, tacos and pizza paleo style!
WEDNESDAY: Mexican Chicken Chowder
I love this soup from Danielle and she has now added an Instant Pot version too!
THURSDAY: Roasted Salmon with Fennel & Bok Choy
This sheet pan dinner sounds delish! If you’ve never had roasted fennel it’s one of my favs.
