MEAL PLAN April 16th

If you’ve ever wanted to experience four seasons in one week you should visit Chicago in the Spring. We had snow on Monday, 70 degrees on Thursday and its about to rain today. We did our best to soak up as much sunshine as possible yesterday because I’m afraid the grey skies are here to stay for awhile longer. But enough about the weather, let’s talk food. In my constant search for new and inspiring recipes I’ve been drawn to cozy meals with lots of veggies. I’m also longing for some more seasonal variety and steering away from winter squashes and root vegetables because have I mentioned that it’s been a long winter? I hope that these meals offer some fresh new flavors and diversity to your dinner table too!

MONDAY: Sheet Pan Chicken with Za’atar, Potatoes & Greens

Za’atar! If you’ve never used this spice mix you’re in for a treat. This middle eastern blend of thyme, sesame seeds, sumac and salt is so good on just about anything. This whole sheet pan dinner craze is also a trend I can get behind.

TUESDAY: Spicy Lamb & Lentil Tacos

I came across this recipe last week and thought they would make great tacos! I’ll be using a goat milk yogurt but if you need to keep it dairy free just omit or use a plain dairy free yogurt.

THURSDAY: Bang Bang Shrimp Lettuce Wraps 

I can always count on a recipe from Alex to be freaking delicious so I’m extra excited to try these out!

FRIDAY: Spring Minestrone Soup

Another spring soup and again very adaptable. This version is vegetarian but could easily be made vegan or you could add chicken if you’d like.
