Meal Plan March 26th

Hey! Is it really the last week of March already!? This month has flown by and this next week is leading up to Easter Sunday. I’ll be in Kansas City to celebrate with my family this year and plan on using some recipes from Danielle Walkers Celebrations Cookbook. She has an entire Easter menu and it looks fantastic! This week I’m working as a food stylist on set which is super fun, but it also means I most likely won’t be cooking with you guys. I still wanted to make a meal plan to give you some more inspiration and if time allows I’ll try and make an appearance.

MONDAY:  Lemon Chicken Thighs 

> This is a new super simple recipe from Bon Appetit this month and would be great with any side from potatoes, cauliflower rice or a green salad.

TUESDAY: Sriracha Lime Cauliflower Tostadas

> I always have requests for plant based recipes and I love cauliflower tacos so here is another awesome version to add to your taco Tuesday!

WEDNESDAY: Thai Basil Chicken Stir Fry With Ginger Peanut Sauce

> I had multiple requests for stir fry and this one loos super yummy! I would use chicken thighs personally and if you can’t eat peanuts then swap for cashew or almond butter.

FRIDAY: Herb Roasted Salmon With Garlic Green Beans & Cheery Tomatoes 

> Here’s a great one sheet pan meal to finish out the week!
