I can’t believe another week has flown by and it’s Friday already! Daylight savings starts on Sunday and I couldn’t be happier. I am so ready for Spring flowers, the start of longer days and a little warmer temps. Nova has been asking when we can go to the beach which isn’t helping when I know we are months away from beach weather and my response to everything is “waiting is hard”. But while we wait I’ve come up with some good recipes to get us through the next week.

MONDAY: Banh Mi Burger Stack
Alex is at it again with a super delicious burger with some of my favorite flavor combos. This recipe includes quick pickled veggies and a spicy aioli! This is a great recipe to double if you want to have lunches for the week.
TUESDAY: Sheet Pan Chipotle Portobello Taocs
Another awesome sounding plant based taco! If you’ve been following me for a while you know my love of veggie tacos. These include pickled onions and a vegan cilantro crema.
I love chicken cacciatore and I haven’t made it in ages! I was trying to find the recipe I’ve used in the past and this looked like the closest version I could find. Serve this over cauliflowers rice or rice.
