Meal Plan February 26th

We are two weeks away from Spring Forward and I am soooooo ready for the extra light! To cope with the next few weeks of Winter I’ve put together a hearty meal plan full of tasty recipes. (I mean does it get anymore tasty than pork tacos???) For those of you who are checking out my website for the first time you should know that I cook these recipes daily and post the demo to my Instagram Stories. I’ve found this is a great way to share what I’ve learned along the way and show you how easy it is for you to do it too. MONDAY: Moroccan Chicken Butternut Squash Stew

> I created this recipe a while back and am looking forward to making it again.

TUESDAY: Five Spice Pulled Pork or Beef Tacos with Asian Slaw

> Ok, so these sound amazing! I’m going to adapt them for the instant pot and cook for 35 minutes and let it come down in pressure naturally. I’m also going to sub the brown sugar for coconut sugar.

THURSDAY: Japchae Steak or Veggie 

> I love this recipe from Russ…It’s easily adaptable for meat eaters or plant based eaters which I love.

FRIDAY: Sizzling Shrimp Lettuce Wraps with Smoky Red Pepper Sauce 

> This shrimp sounds so delicious and I got to sample the sauce at Teri’s house last week and let me just say its so delicious!
