Meal Plan February 12th

The snow is falling and I’m counting down the weeks we have left of winter. The good news is we’re almost half way through the month and this week we’re celebrating Valentine’s Day with our annual heart shaped cookie party with some of our closest mom friends and kiddos. I have fallen in love with the Gluten Free Sugar Cookies from Minimalist Baker and the Vegan Royal Icing from Heather Chritso. The icing is magic, it goes on smooth and hardens when it dries. It’s these simple traditions that help us give meaning to time and joy to being in the middle of winter. Plus, the kids have a total blast!

MONDAY: Creamy Paleo Tortilla Soup

> I’ve been meaning to try this recipe for months now because I love Beth’s recipes and I love tortilla soup!

TUESDAY: Cauliflower Shawarma Tacos 

> Yum! These flavors sound awesome! I’m going to make cassava flour tortillas with this recipe.

WEDNESDAY: Cabernet Braised Short Ribs with Parsnip Turnip Puree 

> I want to make the “Dinner For Two” from Danielle Walkers Celebrations cookbook. It includes a wedge salad, these shorts ribs, chile garlic rapini and salted caramel chocolate panna cotta. The cookbook is amazing and she shared the short rib recipe if you don’t have the cookbook.

FRIDAY: Tomato Garlic Shrimp 

> This is a quick and delicious recipe I developed a while back and wanted to make again.
