Meal Plan: July 17th

Hey guys! Hope you are having a great weekend! Here is this weeks lineup. I know a number of you took advantage of the Instant Pot Prime Deal last week and now you are staring at this large machine wondering where to start. I was intimidated at first too! My number one advice is to seek out recipes using the Instant Pot and follow the recipe until you get more comfortable with using it. I’ve added one of my favs from Nom Nom Paleo on the menu this week!

MONDAY: Grilled Peruvian Chicken or Portobellos with Green Sauce + Avocado Cucumber Salad

I love that this recipe can be made with meat or mushrooms, I might do both because I love portobellos!

TACO TUESDAY: Vietnamese Fish Tacos

So, I know I just made the banh mi bowls last with steak but then I stumbled upon this recipe and I have some leftover pickled vegetables to add on top!

WEDNESDAY: Instant Pot Chicken Pho

This recipe is a go to for me! The broth alone makes it totally worth it. This recipe uses zucchini noodles but if you would rather use rice noodles go for it!

FRIDAY: Southwestern Style Taco Wedge Salad

If it has the word taco in it I’m probably on board! This recipe sounds like a quick fresh take on a taco salad.
