Hey guys! Here is the meal plan / inspiration since I know I’ll be out a couple nights I’m not certain how many of these will be made but I wanted to leave you guys with some good ideas. I’ve also included two pressure cooker recipes because A: Summer temps & B: Quick! I absolutely love my Instant Pot pressure cooker and highly recommend one over a slow cooker because it cuts cooking time down so much and makes a variety of things from bone broth to rice and beans.
MONDAY: Lemongrass Steak Banh Mi Bowls
This recipe has my name written all over it! As soon as I saw Alex post this one I knew it was going on the meal plan!
TACO TUESDAY: Pressure Cooker Chicken Tacos
I’ve been wanting to try this recipe since Nom Nom Paleo recipes are always winners! She also the Pressure Cooker Queen!
WEDNESDAY: Grilled Chicken with Cherry Tomato Vinaigrette
Summer is the season for grilling and tomatoes and this recipe couldn’t be simpler.
FRIDAY: Pressure Cooker Whole Chicken
I haven’t tried this one yet but I’m super intrigued! I would serve this with a fresh green salad and call it a day.
