Meal Plan: June 26th

Can you believe this is the last week of June!? I hope your first month of summer has been off to a good start. I must admit I usually have a few ideas ahead of time of meals I want to make but this week I had to start searching for ideas. Between inspiring Instagram posts, Pinterest and Bon Appetit magazine I pulled together a week of meals I’m excited to make and I hope a few of these make it on your plate too!

MONDAY: Thai Chicken Lettuce Cups

I love Larb! Also known as Thai Lettuce Cups which includes ground meat and lots of herbs! Traditionally this is served with sticky rice but Teri has made a simple and whole30 version sans rice.

WEDNESDAY: Savory Peach + Cucumber Salad with Roast Chicken

I love a good roast chicken along side a fun summery salad. I had this salad this weekend at a BBQ and it was amazing! If you’ve never spatchcocked a chicken before it’s simple and cuts down on the cooking time.

FRIDAY: Grilled Pesto Shrimp + Veggies

Pesto season is in full swing! Grilled shrimp is super quick and delicious and I’ll be adding some other veggies to the grill like small potatoes, asparagus and maybe some sweet peppers.
