Meal Plan: May 29th


Happy Memorial Weekend! I hope you are spending it around some grilled food and
sharing it with people you love. I just received the newest issue of Bon
Appetit a couple days ago and there are a bunch of recipes I want to try so I
will be including two of those this week with my substitutions! I’m also
including two barbacoa taco variations of either lamb or beef. I’ve made both
of these recipes and enjoy them equally but I’ll be making the lamb this week.
Gotta love a short week but since I’ll be eating from home three nights this
week I’m not including a forth recipe.

TUESDAY: Lamb or Beef Barbacoa

The lamb can also be cooked in a slow cooker on low for six hours instead of the oven


Rice Noodles w/ Shrimp + Coconut Lime Dressing

I do eat rice noodles here and there but I will most likely use spiralized zucchini and
or daikon radish because it’s a great way to add more vegetables. I will also
be subbing out the brown sugar for coconut sugar and the veg oil for avocado

Salmon with Hot Sauce Vinaigrette + Pickled Veg

This recipe calls for rice but I will be using cauliflower rice because I love it and again
another great way to eat more vegetables! If you are not a hot sauce fan or are
cooking for children I would sub the hot sauce for 1-2 T of honey and add a
little more rice wine to the vinaigrette for a sweeter take without the heat.
