Crispy Smashed Potatoes & Garlic Truffle Aioli

These potatoes are so bomb. They make a great side dish to almost anything!

6 small potatoes I used golden


Olive oil


3-4 Tablespoons Mayo

1 clove of garlic minced

1T lemon juice

1T white truffle oil

*Parsley optional for garnish

In a large pot of water add a teaspoon of salt then the potatoes and bring to a boil. Once boiling cover and simmer for around 30 minutes until fork tender.

Preheat oven to 450

Remove the potatoes from the water and dry on a cutting board. Using another small cutting board or pot simply smash the potatoes and then place on a foil lined sheet tray.

Drizzle with olive oil and sprinkle with a good pinch of salt on each potato. Bake in the oven for 30 minutes or until crispy.

While the potatoes bake place all the aioli ingredients into a small bowl and whisk.

Once the potatoes are finished baking top with aioli and devour!
